Blue Sheep Coffee Roastery is built on more than a decade of hands-on experience in the Nepali coffee industry. From working closely with farmers to understanding coffee at every stage — growing, processing, roasting, and serving — our focus is simple: to unlock the true flavour of Nepali coffee and share it honestly with the world.

Blue Sheep Coffee Roastery was not created overnight. It is the result of years spent learning, listening, and working within Nepal’s coffee ecosystem.
Our founder, Mahendra Gurung, has been actively involved in the Nepali coffee industry since 2013 and is an Authorized SCA Trainer (AST) in Nepal. His journey has included farmer engagement, professional training, quality improvement, and continuous work toward raising the overall standard of Nepali coffee. A key part of this journey has been encouraging young professionals to see coffee not just as a job, but as a long-term craft and career.
In 2024, this collective experience and understanding led to the establishment of Blue Sheep Coffee Roastery, alongside Coffee De Himalayas (CDH) — our coffee shop and tasting space. Together, these two ventures allow us to stay connected to the full coffee cycle, from origin to the final cup.

Nepali coffee is grown in some of the most demanding environments — steep terrain, high elevations, small land holdings, and limited infrastructure. These challenges shape the character of the coffee and the people who grow it.
We work directly with farmers and producer groups, focusing on long-term relationships rather than short-term buying. We prioritize transparency, fair pricing, and mutual respect, paying above market rates whenever possible. Our goal is not only to buy coffee, but to support families, encourage better farming practices, and help create stability within coffee-growing communities.

Coffee quality is the result of hundreds of small decisions. At Blue Sheep Coffee Roastery, we pay attention to each one.
We source high-altitude Arabica from different regions of Nepal, evaluating each lot carefully before it enters the roastery. Roasting is approached with patience and precision — guided by tasting, experience, and constant adjustment. We cup every batch, track consistency, and focus on balance, clarity, and origin expression rather than chasing trends.
During roasting, we listen for the moment the bean changes — the audible crack that signals flavour development. That moment represents everything we stand for.

Coffee De Himalayas (CDH) is an extension of our roastery philosophy.
As our café and retail space, CDH allows us to serve our coffee as intended and stay directly connected to how people experience it. The café gives us daily feedback — from espresso performance to filter profiles — helping us refine our roasting and maintain consistency across batches.
By operating both the roastery and the café, we close the loop between sourcing, roasting, and service, ensuring nothing is lost between farm and cup.

In the high Himalayas, the Blue Sheep survives where conditions are harsh and the terrain unforgiving. It adapts, climbs higher, and moves confidently in places where others cannot.
This reflects our approach to coffee. Nepali coffee comes from difficult landscapes and limited resources, yet carries incredible potential. We believe the best flavours are often found in the hardest places — and our work is dedicated to reaching them.
